Ingredients
- 2 cups plain wholemeal flour
- 1 tsp baking powder
- 1/3 cup raw or brown sugar (omit for savoury muffins)
- 1 egg
- 1 tsp vanilla (omit for savoury muffins)
- 1/2 cup vegetable oil
- 1 cup milk
- 1 cup of your chosen flavouring (ideas listed below)
Method
- Preheat oven to 180°C.
- Sift flour and baking powder into a large bowl. Stir in sugar (omit if making savoury).
- In a separate jug, mix together egg, oil and milk.
- Add wet ingredients + extra flavours (see below for ideas) to dry ingredients and fold through gently.
- Line muffin tin and spoon mixture evenly into muffin holes.
- Bake for 20 minutes or until a skewer comes out clean.
Flavour variations
Blueberry – add 1 cup of blueberries (fresh or frozen)
Strawberry – add 1 cup of strawberries (fresh or frozen)
Banana – add 1 cup of mashed bananas and 1 tsp cinnamon
Sultana – add 1 cup of sultanas
Spinach and sundried tomato – add 1 cup of chopped spinach and 1/2 cup sundried tomato
Feta and roast pumpkin – 1 cup roast pumpkin and 1/2 cup crumbled feta
Cheese and corn – 1/2 cup grated cheese and 1 cup corn (fresh or frozen)
